Step 1: Cleaning

The first step is cleaning the ribs. We need to remove the excess fat from the surface of the meat. Make sure to take off most of the fat, leaving the meat nice and red. This step is crucial to ensure even cooking and a balanced flavor.

Step 2: The Rub

The second step is what grill lovers call Rub, a spice mix that is applied to the meat. In this case, we will use a simple mix of salt and pepper in equal parts. Before applying the Rub, drizzle a bit of oil on the meat and spread it well with your hands. Then, cover the entire meat with the salt and pepper mix, except the underside of the bone that will be in direct contact with the grill.

Step 3: The Thermometer (Optional)

If you have a meat thermometer, it’s useful to insert it into the meat. The internal temperature should reach 93 degrees Celsius to ensure that the collagen in the cut melts, making the meat tender and juicy. This cut of meat requires slow and low-temperature cooking.

Step 4: Cooking

Place the ribs on the grill at a temperature between 110 and 135 degrees Celsius. The meat should cook for about five to six hours until it reaches 93 degrees Celsius at the core. If you can’t maintain the grill temperature, you have two options: add more charcoal or transfer the ribs to the oven. Set the oven to 140-150 degrees Celsius, place the ribs in an aluminum tray, cover with aluminum foil, and let them cook until they reach 93 degrees Celsius.
